(1) Occhielli Oat Whiskey
Italy/Piemonte
Mixed milk (cow's milk, sheep's milk)
Long-aged cheese is soaked in whiskey to make it drunk, then oats are added to the surface and it is aged for another month or more.
It has a savory aroma of oats and a rich, tasty, mellow flavor from being soaked in whiskey.
It goes well with deep red wine and whiskey.
(2) Bacchus
Japan/Nagano/Matsumoto City/Shimizu Farm
It is produced at Shimizu Farm, which stretches at an altitude of 1,400 to 1,800 meters at the foot of Nomugi Pass. It is made from the milk of Brown Swiss cows raised in a magnificent natural setting overlooking the Northern Alps.
This cow is said to be a rare breed in Japan, and the amount of milk it produces is very small.
The cheese is aged for more than 10 months using the milk, and has a nutty aroma and the sweetness and flavor of the milk.
